Ok that's what I'd expect to see. Just wanted to make sure that was correct just in case it was causing the problem.I've reinstalled the drivers once more, now it is listed as "serial usb device", however that didnt change anything
If it's not showing up as a game controller in Windows then it won't work with OpenTrack so I wouldn't worry about OpenTrack until you've got it appearing as a game controller in Windows.The Tracker does not show up as a windows game controller.
Tbh, with Windows 10 you shouldn't even have to install any drivers, just plug it into the computer and Windows should automatically set up the drivers and see it as both a COM port and game controller automatically.
The only two things I can suggest for now is to firstly take a look at this video just on the off-chance it shows something you may be doing wrong....

....and to try re-flashing the firmware from the GUI. Note that the correct firmware is 'EDTracker2_9250 4.0.5' as show in your screenshot, not the version mentioned in the video. Then see if appears as a game controller in Windows after re-flashing the firmware.
